Last week, Avel Manansala, a very dear friend of ours from General Santos came here to Manila for a visit.  He brought us some Tuna and Cream Dory. Since the past few days, we’ve been eating unhealthy food,  I decided to cook something healthy today. This is my version of cream dory escabeche, I adjusted the taste to mild sweet and sour taste. I only used the juice of the pineapple to make it a little sour. I only topped the sauce on the fried cream dory just to make the taste of the entire dish balance.
