Kapampangan Way of Cooking at the Maya Kitchen

Nancy Reyes LumenEver tried Pampango style of cooking? For sure most of us had tasted Pampango dishes. But have have you experienced cooking Pampango recipes? If you are curious on how Pampango prepare their food, I think it’s high time for you to witness and taste on how the Pampangos cook!

On June 29, at the Maya Kitchen, watch and learn on how to cook in Kapampangan style. The demo will showcase dishes with Tagalog and Pampango influences, all slow cooked and worth passing on down to the next generation.

The cooking demo is entitled ‘Heritage Recipes of the Reyes Girls.’

Well known chef, author, editor and host Nancy Reyes Lumen is joined by her mother Nena Tancinco Reyes, sisters Marian, Corito and May as they prepare Kapangpangan recipes perfected by the venerable Reyes matriarchs Lola Asiang Reyes and ‘InaMaria Tansinco.

Nena Reyes, a mother of 12 will be preparing her clans favorite soup! She calls it Kinulob ng Ina.

Nancy Reyes Lumen, the practical cook, will be preparing Mechado her lola Asiang way using shallots and over ripe tomatoes on camto or flank steak part of the beef. (I know that this part of the beef would take time to cook.)

Marian Reyes, a very good cook who can duplicate her elders way of cooking. She’ll be preparing Ina’s Adobong Manok sa Beer. Interesting huh? First time to hear chicken cooked in beer.

Corito Reyes, a sport active and a good cook will be preparing her own style of Pastel de Lengua.

Youngest of the 12 siblings, May Reyes Serrano, is known for her Kesovore Spread. This time she will prepare her mother’s Pochero using her homemade cured bacon.
