I really don’t know how to properly cook beef to make it tender, especially for the Mechado recipe. So I decided to use a crock pot or a slow cooker to make sure the beef comes out tender. It makes me wonder if I just feel too excited to eat all the time that most of my beef recipes are poorly cooked in terms of beef tenderness. This time, I used a crock pot to avoid further disappointments.
Here’s my mom’s version of beef mechado cooked in crock pot or slow cooker.
Ingredients:
Defrost beef cubes and cut them into serving size if you think its too large.
Heat olive oil and saute garlic, onions and tomatoes
Sear beef cubes till brown
Add the beef cube and dissolve
Blend the soy sauce and add the water
Add the tomato paste and sugar
Pepper and salt to taste and and add the bay leaf
Simmer for 5 minutes
Transfer everything to crock pot and set it to low
Cook for 6 hours.
Best time to cook this is before you go to bed or if you are planning to eat this for dinner, cook this right after breakfast.
