Chicken Parmigiana Pasta Recipe

This recipe is a very easy one. All you need are chicken, canned tomato spices and cheese. It is one of my favorite Italian recipe actually and I’ve been cooking Chicken Parmigiana for years.

It is really an advantage if you have an internet at home for researching stuffs that you wanted to do, like searching for the food recipe that you ate at your favorite restaurant. There are also times that some ingredients are not available here in our place, so I tend to substitute some possible ingredients to the recipe and creates my own version.

I know I have limited cook books here and not all recipes that I want are available on my favorite cook books and that made home Internet important to me.

Here’s what you need for Chicken Parmigiana Pasta Recipe.

Serves 3-4

  • Chicken Parmigiana Ingredients b4 pcs Chicken breast fillet
  • 4 slices of quick-melt cheese
  • 1 pc egg
  • 1 cup bread crumbs
  • 1 tbsp of Italian seasoning
  • 1 tbsp of dried basil leaves
  • 1 pinch of salt and pepper

Parmigiana Sauce

  • 4 cloves of garlic minced
  • 1 medium size of onion minced
  • 1 chicken cube
  • 3 tbsp of olive oil
  • 794gms or 1 can of Hunts tomato crushed
  • 1 tbsp of italian seasoning
  • 1 tbsp of dried basil leaves
  • 3 tbsp of grated Parmesan cheese

Preparation of Chicken Breast Fillet:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  • Slice chicken fillet down the middle half-way and stuff with quick-melt cheese
  • Lock it using toothpick
  • Season it with basil and Italian seasoning
  • Beat egg in a bowl, add a pinch of salt and pepper, dip stuffed chicken breast
  • Coat dipped chicken with breadcrumbs, place in oven and bake for 30 minutes or until
  • cooked

Do while baking the chicken:

For the Parmigiana Sauce

  • Heat olive oil and saute garlic and onions till done
  • Pour Hunts tomato crushed sauce and simmer
  • add chicken cube, dried basil leaves and Italian seasoning
  • Stir well and simmer again for 5 minutes in low fire

After baking the chicken, pour over the parmigiana sauce to the chicken and add Parmesan cheese and bake for another 10 minutes.

Do while baking the Chicken and sauce:

Cook spaghetti according to packaging. Aldente is the best texture for spaghetti.
