Ever heard of Alba Restaurante Espanol? If yes, now’s your chance to wittness Chef Miguel de Alba of Alba Restaurante Espanol to do some delicious Spanish dishes to us at The Maya Kichen on March 23 2013 from 9am-1pm.
I’m pretty excited to watch Chef Miguel make and prepare some of his favorite Spanish viands. I know for sure that I’ll be learning lots of tricks and techniques from Chef Miguel.
Chef Miguel will demonstrate Jamon con Mangga y Arugula (Homemade Spanish Cured Ham with Mango and Arugula Leaves); Croquetas de Bacalao (Salted Codfish Croquettes); Fabada Asturiana (White Beans with Chorizo, Jamon and Black Sausage); Lapu-lapu en Salsa Verde (Lapu-lapu Fillet in Light Green Sauce); Paella de Cordero (Lamb Paella) and Tarta de Limon con Quezo (Lemon Ricotta Squares).
Anyway, Chef Miguel de Alba is the son of the well respected Chef Don Anastacio de Alba. He was already young adult when he had his kitchen calling, following his father’s foot steps and becoming a chef.
Chef Miguel now oversees four branches of Alba Restaurante EspaƱol located at Polaris Street, Bel Air Makati; Tomas Morato, Quezon City; Westgate Center, Filinvest Corporate City, Alabang; and Prism Plaza, MOA Complex.
If you have the love for Vietnamese food, on the same day, March 23, 2013 from 1pm to 5 pm at the Maya Kitchen, Chef Cuc Dorotheo will be demonstrating some Vietnamese favorites.
She’ll be showing us on how to cook Vietnamese Lumpia, fried (Cha Gio) and fresh (Goi Cuon), Rice Noodles with Beef and Lemon Grass (Bun Bo Xau Voi Xa), Chicken with Patis and Molasses (Ga Voi Nuoc Mam Va Nuoc Mau) and Pork Spare Ribs Barbeque with Lemon Grass and Pepper (Xuong Nuong Voi Xa Ot).
Maya’s Certificate Courses with hands-on include: Basic Culinary, March 19-22, Tuesday to Friday; Fundamentals of Bakery Production, March 12-15, Tuesday to Friday, 10am-3pm; and Restaurant Operation, March 15-16, Friday and Saturday, 9am-4pm.
